Winemaking

Our 2020 Red Head Pinot Noir was hand-harvested, crushed and de-stemmed into small batch vessels for a cold soak and then alcoholic fermentation. This Pinot Noir spent 30 days on its skins before it was pressed off to settle and then racked into French oak barrels. The French oak used was 15% new barrels, 40% 1 and 2 year old barrels and 45% neutral barrels where it was aged for 10 months to gain complexity and layers of fruit and tannin. After ageing, specific barrels were selected for this Red Head blend. The barrels were blended together into tank where they were cold stabilized, and lightly filtered before bottling. This is our fun, everyday styled Pinot Noir that is great on its own but also pairs well with light dishes and dinners.
