Winemaking

Each variety in this Bordeaux-style blend was harvested when ripeness was optimal for the specific variety and fermented individually. The grapes underwent a 5–7-day cold soak before alcoholic fermentation. Once alcoholic fermentation was complete, and the tannin structure was right, we gently pressed off the skins and transferred the wine into French Oak barrels for malolactic fermentation and aging with careful monitoring for 18 months. Mr. Adamo meticulously selected barrels and conducted blending trials to create the final blend. A light filtration was carried out before bottling.
