2023 Estate Gamay Rosé

Our Estate Rosé is made from our Estate grown Gamay Noir. The Gamay Noir grapes were hand harvested in early morning with cool temperatures then whole cluster pressed in our gentle bladder press. The juice was pumped to a stainless steel tank for cold settling and clarification before racking to a secondary stainless steel tank for alcoholic fermentation. With temperature control, the alcohol ferment was carried out at 14ºC to maintain freshness and fruitiness in the wine. When alcoholic fermentation was complete, we sulphured the wine to prevent malolactic fermentation and aged the wine in stainless steel on its fine lees to develop mid palate texture and creaminess. The wine was then protein-stabilized and filtered before bottling.
