2024 Frizzante

Our Estate grown Vidal grapes were harvested in mid-October, with specific timing that incorporated fresh fruit flavours and zesty acidity. We hand harvested and whole cluster pressed the grapes in our gentle bladder press. The Juice was then cold settled in a stainless tank before racking into a second stainless tank for a long cool alcoholic fermentation. Once the wine finished the primary fermentation, it was transferred to a Charmat tank, where yeast and sugar were added to induce the secondary fermentation. The carbon dioxide produced in the secondary fermentation is captured in the tank and the wine, creating its characteristic bubbles. Finally the wine was carefully filtered and bottled.
